Coffee purist Arne Holt says his commitment to the taste of coffee he serves differentiates his drinks from Starbucks'. "Starbucks has gotten so far away from coffee," he says. "It's basically become a sugar and dairy company." That's why Holt toasts the coffee beans himself at his shop; he grinds them, too, adjusting for humidity on a given day.
