If you're looking for a roundup of the world's best hamburgers, you've come to the wrong place. Burger fans everywhere can argue until the proverbial Black Angus comes home as to which establishments serve the best, and inevitably some aficionados will be disappointed because their favorites failed to make the cut. But this is about the most original and innovative burgers—burgers that may not be to everyone's taste and may even taste a little odd, but that's the point. It's easy to cook up some ground beef and slip it between two pieces of bread. What's hard is coming up with a new way to do it. And if it tastes great in the process, even better.

But since McDonald's (MCD) began slinging its uniform burgers decades ago, many eaters are in search of something more original and authentic; something they can't find everywhere else. If that means putting pineapple on your burger, or swapping out the beef for veal, turkey, or even tofu, that's O.K. Chances are, it will be new to you.
